This rum was distilled in 2010 at the South Pacific Distillery in Fiji using a column still. It was then aged in oak barrels for nearly six years. After this tropical maturation period, the distillate was prepared for its journey to Liverpool, England, in 2017. Upon arrival, the fine spirit was transferred to an ex-bourbon barrel for its continental maturation. The rum reached its culmination in 2022 in Scotland, where it was bottled in a limited edition of 305 bottles. Intense notes of chocolate and orange, coupled with a rich alcoholic character, make Rum Fiji a truly aromatic experience. Aromas of chocolate pastries and bread, along with subtle woody tannins, are also present. On the palate, the alcohol is pronounced and spicy. Hints of cake, chocolate, and orange, as well as a pleasant touch of oak, tobacco, and chocolate, perfectly round out the flavor profile.
