Hamelle

Hamelle is a distillery operating with the finest craftsmanship, located in the Charonne district in the heart of Paris. The distillery's aim is to offer contemporary, unique, and approachable spirits whose complexity will nevertheless captivate newcomers. This new Hamelle Aquavit Voltaire owes its name to both the origin of its ingredients (100% French) and the metro station just five minutes from the distillery. Aquavit, from the Latin "aqua vitae," meaning water of life, is a spirit of Scandinavian origin, made from caraway and dill. This tricolor version, previously unavailable in France from Hamelle, was created in collaboration with Samir de Ankhor, a supplier of exquisite French spices to gourmet restaurants and Michelin-starred chefs. The Hamelle version combines the aromatic power of caraway with the freshness of dill, the sweetness of coriander and green anise with a hint of verbena. Aquavit Voltaire is wonderfully fresh and atypical, with beautiful herbal notes. It can be enjoyed classically ice-cold during a meal or simply as a refreshing long drink with tonic.

HAMELLE Martine Citrus Liqueur is a modern citrus liqueur, crafted with care and artisanal precision in the distillery, translating classic liqueur tradition into a fresh, contemporary form. It is made using six select Italian citrus fruits, including lemons, oranges, clementines, citron, Sicilian grapefruit, and Calabrian bergamot. The peels of these fruits are organically or untreated and gently macerated to preserve their essential oils and natural aromas, while the sugar content is deliberately kept low. On the nose, the liqueur is clear and vibrant with intense notes of fresh orange, lemon zest, and delicate clementine. On the palate, Martine is balanced and elegant, characterized by juicy lemon freshness, the subtle bitterness of grapefruit and candied citron, and a delicate, natural sweetness that adds depth without being heavy. The finish is long, citrusy, and slightly saline, with a lingering freshness. This liqueur is particularly enjoyable chilled, neat, with soda or tonic, or as an elegant alternative in a light spritz.

Jérôme Hamelle decided to fundamentally change his professional life to dedicate himself fully to his passion for handcrafted spirits. Surrounded by expert friends, he immersed himself in traditional recipes that had long been forgotten, developing his own vision: to create spirits that are simple, clear, and yet original. He consistently relies on high-quality ingredients such as organically grown plants and spices, as well as French grain alcohol. Pastis Parisien was his first creation and was developed with particular care. This anise-flavored aperitif contains no added sugar, allowing the delicate aromas of the 13 selected herbs and spices to shine through in their purest form. With notes of anise, licorice, and herbs, it is excellent as an aperitif when diluted with water. Presented in a small 0.2-liter bottle, Hamelle Pastis Parisien is also a compact option that can be enjoyed neat or on the rocks as a digestif, providing a fresh and spicy finish to a meal.
