Ransom Spirits comprises a farm and distillery spanning 40 acres in the foothills of the Oregon Coastal Range. At Ransom, they dedicate ample time to selecting premium ingredients, carefully milling the grain, processing and fermenting the mash, and, most importantly, precisely calculating the cut. This Ransom Bourbon Whiskey is distilled in Oregon and Indiana using French alembic pot stills. It undergoes a minimum two-year maturation period in various two-, three-, and twelve-year-old charred American oak barrels. Each barrel is hand-selected to achieve greater aromatic intensity, flavor, and body in the spirit. Bottled, this robust bourbon whiskey displays a deep chestnut hue. On the nose and palate, it offers classic bourbon notes of toffee, soft caramel, sweetcorn, and grains, with additional hints of cocoa powder, anise, and a rich, honeyed finish. Its finish reveals long, spicy and warm notes of rye with orange zest, which ultimately give way to a hint of malt.

Ransom is located in the Willamette Valley of Oregon, nestled in the foothills of the Coastal Mountain Range, and comprises a 40-hectare organic farm, a vineyard, and a distillery. Barley has been cultivated there since 2008, and the first vines were planted in the spring of 2010. In keeping with Ransom's commitment to sustainability, the farm has been certified organic since 2011; the distillery received organic certification in 2021. Matt Cechovic joined Tad Seestadt, the founder of Ransom Spirits, as an apprentice in 2019. Today, he oversees all operations at Ransom. This Ransom Henry DuYore's Rye Whiskey was created to harmoniously blend the distinctive character of rye with the rich, subtle flavor profile of malted barley. It is made from a combination of pot and column still distillation, followed by two to three years of maturation in various oak barrels. The result is a pure rye whiskey with strong and structured aromas of dark rye and demerara, underpinned by lively notes of fresh sugar cane and exotic, intense notes of hibiscus and agave.

Ransom Old Tom Gin is produced by the Ransom Wine Company & Distillery in Oregon. Its distinctive apothecary-style bottle evokes America's former Wild West. This Old Tom Gin is a blend of two distillates, which are then combined to create a single batch that is subsequently redistilled. One distillate is a malted grain mash (similar to whiskey production), while the other is a neutral grain spirit infused with botanicals such as juniper berries, orange peel, lemon peel, coriander, angelica root, and cardamom. The blend is then aged for a further six months in old, cleaned Oregon Pinot Noir barrels, a crucial factor in the gin's quality and flavor. This aging process imparts its straw-like color and makes it smooth and characterful. Its aroma is reminiscent of a gentle, lightly spicy whiskey or a wonderfully vibrant gin. The result is a complex, full-bodied gin with a touch of sweetness and a balanced, warming finish, quite unlike the transparent London Dry gins. It's best enjoyed neat, on the rocks, or in a classic gin cocktail.

Ransom Old Tom Gin The Geezer builds on the success of Ransom Old Tom Gin, the first locally produced Old Tom Gin since Prohibition, representing a historically authentic revival of the gin style that dominated the mid-19th century—the golden age of American cocktails. The characteristic, subtle maltiness of this Old Tom Gin is based on a malting of malted barley, combined with an infusion of select botanicals in neutral distillates. From this foundation, Ransom Old Tom Gin The Geezer was created, adding further depth and richness to the classic style by aging it for three to five years in used French oak wine barrels. On the nose, rich aromas of incense, cedar, and orange oleo-saccharum unfold, accompanied by exotic notes of cardamom and teak. On the palate, it reveals a full, rounded mouthfeel with hints of caramel and malty pastries, complemented by delicate notes of lemon pastilles and coriander. The Geezer impresses with its warmth and depth, culminating in a honeyed, resinous finish that evokes associations with spiced winter pastries and a fresh sea breeze.

Ransom Spirits is located in the rolling hills of Willamette Valley near the town of Sheridan, Oregon, and was founded in 1997 by Tad Seestedt. This Ransom Rye Barley Wheat Whiskey is gently distilled from the finest rye, barley, and wheat in hand-hammered, direct-fired alembic copper pot stills. It was then aged in ex-French Pinot Noir oak barrels, developing its rich, complex, yet delicate grain flavors. The nose detects rich aromas of hazelnut shortbread and sweet biscuits, which provide a pleasant counterpoint to the earthy spice notes of the rye. On the palate, a smooth entry with aromas of Amoroso sherry and brown butter gradually unfolds into a full-bodied flavor. The finish is rich and lingering, with sweet and spicy notes. Grain is milled, mashed, and fermented in small batches and then hand-distilled to order. The spirit is then aged for three years in French and American oak barrels before being bottled, waxed, and labeled by hand. The result is a highly aromatic, full-bodied, rich, and complex American whiskey that perfectly reflects its two distinctive origins: ancient Ireland and the green hills of Oregon.
