Rum
Molasses rum originated as a by-product of sugar production in the 17th century, when sugarcane farmers in the Caribbean realised that they could significantly maximise their profits by allowing the leftover thick black syrup, the molasses, left over from the sugar crystallisation process, and then distilled it. Even today, molasses remains the basis for the majority of rum produced. An exception to the rule is Rhum Agricole, which originates from the French islands. These are produced from fresh sugarcane juice and are far drier and more aromatic than molasses rums. Experience gained from cognac production has had a strong influence on the production of Rhum Agricole throughout the French colonies.
