Aikan Whisky matures for three years in French oak casks in the temperate climate of Scotland. A second maturation period of one year in ex-rum casks in the tropical climate of Martinique follows, giving the whisky a unique concentration of wonderful aromas. The nose is rich and flavorful. Vanilla, malt, and fruit notes reveal themselves, developing a cake-like aroma after a few minutes. Notes of crème brûlée, candied orange, apricot tart, banana, and roasted almonds, combined with fresh notes of sugarcane, can also be detected. Exotic notes of papaya, plum, and cooked apple also emerge. All of this is enhanced by slightly woody and spicy notes of nutmeg and cinnamon. On the palate, delicious notes of candy cane, pecan, candied chestnut, dark chocolate, black pepper, and a typical Scottish smokiness with a wonderfully fresh herbal note surprise and delight the connoisseur. This Aikan Whisky Extra Collection Batch No. 4 is a blend of distilled malts (in a pot still) and grain whisky (in a column still), initially matured for three years in casks in Scotland. It was then transferred to Martinique, where it matured for up to four years in the tropical climate, using a variety of old rum casks and casks specially designed for Aikan. This whisky presents itself in an intense amber color. It is rich and complex on the nose, with woody, spicy notes of cocoa, marzipan, cinnamon, nutmeg, vanilla, coconut, plum, and citrus fruits. Intense, smooth, and well-structured on the palate, with pastry notes similar to those on the nose and hints of dried apricots, malt, tobacco, coconut, and walnut, all enhanced by spicy notes (cinnamon, pepper, chili), and woody like a very old rum. Aikan Whisky Fine Rum Barrels is a blended whisky made from pot still distilled malt and column still distilled grain whisky, matured for at least three years in oak casks in Scotland, followed by a further year in Martinique. Rich on the nose, it opens with notes of vanilla, floral, malty, and fruity aromas that fade after a few minutes, leaving behind delicate pastry notes. These are followed by aromas of orange blossom, crème brûlée, apricot flan, banana, and toasted almonds, with a delightful hint of raw cane sugar and exotic notes of papaya and mango. Aikan Whisky French Malt Collection Batch No. 1 initially matures for one year in select French oak casks in Brittany, France. This is followed by a second maturation period of two years in ex-rum casks on Martinique, which imparts a unique concentration of aromas and its beautiful amber color to this Aikan whisky. The so-called "Angel's Share" is also exceptional, at almost 10% per year on Martinique, compared to 1.5% in France! Rich and flavorful on the nose, notes of orange blossom, mace, and intense nutmeg unfold, accompanied by fruity accents of citrus and berries (blackberry, strawberry). These are followed by spicy and tart aromas, combined with quince, lemon, and tropical fruits (physalis, passion fruit, and papaya). Intense and smooth on the palate, it evokes the fruity and spicy notes of the nose. It reveals an even more flavorful profile with lovely notes of roasted nuts and cinnamon, all enveloped in maple syrup. It was then transported to Martinique to mature for over three years in a variety of carefully selected oak casks in the tropical climate. The nose is opulent, with woody notes and hints of ripe fruit, along with lovely aromas of citrus and acacia honey. The malted barley becomes more pronounced and vibrant, and the tropical fruits such as mango, pineapple, quince, and bergamot intensify. Finally, subtle spicy and chocolatey notes emerge. In ex-bourbon barrels and selected rum casks with a high ester content, the whisky acquires its distinctive depth and aromatic expressiveness.
