Silkie Irish Whiskey – Ireland’s Wild North in Every Bottle
In remote County Donegal, where rugged Atlantic winds meet moss-covered hills, a whiskey is crafted that is as distinctive as its homeland: Silkie Irish Whiskey. Named after the legendary sea creatures known as Silkies, this Irish whiskey blends centuries-old folklore, expert craftsmanship, and a modern return to peated roots.
Produced by Sliabh Liag Distillers, Silkie is a tribute to the lost whiskey culture of Ireland’s northwest. It brings together velvety sweetness, maritime freshness, and—depending on the expression—finely balanced notes of smoke. Every drop tells a story of wildness, authenticity, and character.

Sliabh Liag Distillers – The Rebirth of Irish Coastal Distilling
A Vision from Donegal
Sliabh Liag Distillers was founded with the clear goal of reviving the almost-forgotten whiskey tradition of Ireland’s far northwest. Donegal—a region with deep Celtic roots and a centuries-old distilling history—was once home to a vibrant distilling culture, until it vanished in the 19th century.
With Silkie, the founders are bringing this tradition back: authentic, peated, and bold—just like the land from which it originates. Their inspiration draws on old recipes and regional distilling practices, combined with a modern commitment to quality.
The People Behind Silkie
Sliabh Liag was founded by James and Moira Doherty, a husband-and-wife team with strong family ties to Donegal. Their mission: to create a whiskey that doesn't cater to the mainstream but instead does what made Ireland great—shows character.
With a small team, an uncompromising philosophy, and a vision of honest craftsmanship, they have achieved the feat of bringing a product from one of Ireland’s most remote areas to the world stage, where it is winning international acclaim.
Tradition Meets Innovation
Silkie combines the best of both worlds: traditional Irish blending expertise with innovative cask maturation and a clear commitment to a peated character—a rarity in Irish whiskey.
The distillery uses local spring water, partially peated barley, and a selection of high-quality casks, including sherry, red wine, bourbon, and virgin oak. The result: complex yet accessible whiskeys with depth and soul.
Silkie Irish Whiskey – Varieties & Flavor Profiles

The Legendary Silkie – the velvety classic
The Legendary Silkie is the brand’s flagship offering—a velvety-smooth blended Irish whiskey named after Ireland’s mythical silkies (seal-folk). It combines unpeated single malts and sweet grain whiskeys, with subtle maturation in ex-bourbon and virgin oak casks. The result: A well-rounded, approachable whiskey featuring notes of honey, butterscotch, toasted grain, and a hint of vanilla.
Ideal for newcomers, fans of smooth Irish whiskeys, and as a base for premium whiskey cocktails.

Dark Silkie – Smoky Depth from the North
With Dark Silkie, Sliabh Liag brings peat back to Ireland. This blended whiskey features a high proportion of peated single malts matured in sherry and oak casks. Notes of campfire smoke, dark chocolate, dried fruit, and spices make it the perfect choice for lovers of whiskeys that are smoky yet balanced.
An Irish whiskey with the soul of an Islay – yet entirely unique.

Midnight Silkie – matured in five cask types, deep and complex
Midnight Silkie is the deepest whiskey in the range: a composition of five cask types—including Sherry, Red Wine, Virgin Oak, and Bourbon. With a peated malt content of up to 35%, it strikes a perfect balance between smoke, spice, fruit, and creamy oak notes.
For connoisseurs seeking depth and complexity—without sacrificing Irish elegance.

What makes Silkie unique?
Maritime Maturation & A Return to Peat
Silkie is one of the few Irish whiskeys that explicitly embraces the use of peat smoke—inspired by Donegal’s almost-forgotten whiskey heritage. Thanks to its proximity to the coast and the salty Atlantic air, the whiskey matures under unique climatic conditions. This maritime maturation lends the peated expressions an added depth and minerality that surprises even seasoned whiskey drinkers.
In a world of increasingly uniform flavor profiles, Silkie consciously takes a different path: bold, rugged, and authentic.
An Independent Distillery with Strong Roots
Sliabh Liag is not a corporate giant, but a family-run business driven by a regional focus, international ambition, and genuine passion. Production processes are transparent, fully traceable, and defined by honest craftsmanship.
Silkie thus represents a new chapter in Irish whiskey: a revival born of conviction, not calculation.
Traceable, Sustainable, and Crafted by Hand
The spirits are fully traceable, and the raw materials used—particularly the barley—are largely sourced from the local region. Bottling, labeling, and shipping are carried out in small batches under strict quality standards.
Silkie eschews chill-filtration and artificial coloring; every variety is bottled in its natural state. The result is an honest whiskey with rough edges and real character.

FAQ – Frequently Asked Questions about Silkie
- Is Silkie a single malt or a blend?
-
All current Silkie whiskies are carefully crafted blends consisting of various Irish single malts and grain whiskies. Depending on the specific expression, the focus is on either unpeated or peated malts—sometimes involving complex cask maturation (e.g., in the case of Midnight Silkie). Sliabh Liag plans to release a Silkie single malt in the future.
- Which Silkie expression is smoky?
-
Dark Silkie and Midnight Silkie contain a higher proportion of peated malts and offer a distinctly smoky flavor profile. The smoke is reminiscent of campfires, wet peat, and dark wood—without the medicinal notes often associated with Islay whiskies, for example.
No—none of the Silkie whiskeys are chill-filtered or colored. They are bottled in their natural color and texture, ensuring the mouthfeel, flavor profile, and authenticity remain fully intact.
Currently, all core range bottlings are bottled at standard strengths (between 46% and 48% ABV).
Silkie is blended and bottled by Sliabh Liag Distillers in County Donegal, Ireland. The permanent distillation site (Ardara Distillery) is currently under construction, while the whiskies used in the current blends are sourced from various high-quality Irish distilleries. The long-term plan is to move to full in-house production.
