The Legendary Silkie Blended Irish Whiskey Non-Chill Filtered has been produced at the Sliabh Liag Distillery, located on the peninsula of the same name in northwest Ireland, since 2014. Even during the distillery's development phase, the focus was on blending finely tuned, double- and triple-distilled, and lightly peated malt whiskeys with smooth grain whiskey to create a particularly smooth and balanced style. This approach continues to define the character of Silkie Whiskey today. It is bottled without chill filtration, thus fully preserving its natural texture and aromas. The tall, elegant bottle, with its blue-green label, reflects the sea at the foot of the imposing Sliabh Liag Cliffs. In the glass, the whiskey displays a straw-gold color with a hint of amber. On the nose, it is fresh and malty, with aromas of green apple and a delicate, honeyed buttery note. On the palate, it is pleasantly smooth with notes of warm gingerbread, orange peel, brioche, and butterscotch. This Irish whiskey can be enjoyed neat or on the rocks. For an Old Fashioned, the distillery recommends using rhubarb or cherry bitters instead of Angostura bitters to best bring out the delicate aromas.
