Sliabh Liag Distillers have taken a bold step with The Legendary Dark Blended Silkie, aiming to surprise whisky connoisseurs with a rich, smoky, and peated Irish whiskey. Inspired by the classic Donegal whiskey style of yesteryear, Sliabh Liag Distillers have created something new: blending the finest double-distilled and triple-distilled peated single malts, matured in sherry casks, with smooth grain whiskey. They use Irish peat derived from heather rather than forest floor, resulting in a sweeter and less oaky peat than Scottish peat. The Legendary Dark Silkie is the second release in the Silkie Whiskey Collection. The nose offers beautiful aromas of fresh apples and pears with spicy, dry notes of smoke reminiscent of young oak. Light notes of sweet pipe tobacco, licorice, and dark chocolate are followed by wonderfully warm toffee and pear aromas. The finish is warm and elegant with hints of malty smoke and peanut butter. To fully appreciate its unique flavors, Dark Blended Silkie is best served neat or over ice. A careful mix with sweet vermouth and a fruity bitters also lends an intriguing smoky note to the classic Manhattan. Dark Silkie simply adds a new dimension to any classic whiskey cocktail.
