Jérôme Hamelle decided to reorient his professional life to dedicate himself entirely to the production of fine, handcrafted spirits. Supported by experienced friends and experts, he immersed himself in traditional recipes that had long been neglected, developing his own approach: to create spirits that are simple, original, and full of character. He consistently relies on high-quality ingredients—including organically grown plants and spices—as well as French grain alcohol. Pastis Parisien was his first creation and was developed with particular care. This anise-flavored aperitif contains no added sugar, allowing the delicate nature of its aromas to be experienced in their purest form. Thirteen carefully selected herbs and spices combine to create a pastis with notes of anise, licorice, and aromatic herbs. Diluted with water, it is excellent as an aperitif, but can also be enjoyed neat or on the rocks as a digestif, providing fresh, spicy accents.
