Pastis, which initially gained popularity due to the former ban on absinthe, is today a spirit that always tastes primarily of anise (or star anise). Pastis Ardent, which is even certified organic, adds a full-bodied, summery freshness to the mix. Besides anise, other botanicals such as licorice, coriander, cardamom, Scots pine, and mugwort contribute to the French spirit's distinctive finesse. While its richness delights connoisseurs of anise aperitifs, its sweetness is what also captivates newcomers. In addition to enjoying it neat, it is often mixed with very cold water in a ratio of up to 1 to 5. On hot or sunny days, however, it is recommended to enjoy Pastis classically over ice cubes.
