El Dorado is one of Guyana's most traditional rum producers and is known worldwide for its complex Demerara rums. With the High Ester Blend LBI/DHE, the distillery presents the first bottling in its special High Ester series, uniting two very different distillates. The La Bonne Intention Rum from the French Savalle column still meets an intense Diamond High Ester Rum from the rare John Dore double retort pot still. Both rums were distilled in 2012 and subsequently aged for eleven years in ex-bourbon barrels under tropical conditions in Guyana. The elaborate, months-long fermentation with local fruits ensures an exceptionally high ester content and gives the rum its distinctive aromatic depth. On the nose, aromas of fig, star fruit, banana, and delicate notes of vanilla, cinnamon, honey, and toffee are revealed. On the palate, candied orange peel, dark chocolate, clove, caramel spice, and subtle roasted aromas unfold before the rum transitions into a dry, long, and spicy finish. This high ester blend is particularly impressive when enjoyed neat at room temperature in a large tasting glass.
