English Harbour Sherry Cask Finish is an expressive rum-based spirit from Antigua, created to celebrate the brand's 85th anniversary. It combines traditional craftsmanship with meticulous cask maturation. The base is a multi-year tropically aged English Harbour Rum, initially matured in ex-bourbon American oak barrels and then finished for several months in select Oloroso sherry casks. Made from Caribbean molasses, with open fermentation and distillation in a John Dore/Savalle hybrid copper still, this spirit impresses with its depth and structure. The nose reveals intense spice notes of cinnamon, cloves, and pepper, accompanied by toffee, dried fruit, and a hint of orange zest. On the palate, a harmonious sweetness unfolds with hints of caramel, nuts, and dark chocolate, complemented by spicy warmth and a subtle sherry dryness. The finish is long, rounded, and slightly nutty with delicate roasted aromas. Ideal for enjoying neat or as an accompaniment to creamy desserts such as crème brûlée.
