With its Pedro Ximénez Excepcional Singular, Bodega Fernando de Castilla presents a true masterpiece of sherry craftsmanship. This rare sherry comes from the exclusive "Singular" range and consists of just nine casks, acquired in 2012 from a historic bodega in Jerez. These casks had previously matured statically for decades in the so-called Sacristía – the most sacred area of the winery, far removed from any solera movement. The average maturation time of this Pedro Ximénez is over 60 years, giving it impressive depth, texture, and aromatic density. In December 2018, this treasure was bottled in a strictly limited edition of only 600 half bottles – each individually numbered and packaged in an elegant wooden case. A true relic from another era. In the glass, the sherry is deep and dark, almost inky, with an oily consistency. On the nose, aromas of raisins, dates, cocoa, licorice, coffee, and fine balsamic vinegar unfold. On the palate, it is velvety and concentrated, with tremendous sweetness and richness. The finish is long, dense, and almost endless. A jewel for connoisseurs, an unforgettable moment – ideal with chocolate or enjoyed neat.
