The small village in Val-de-Ruz, less than 10 kilometers from the city of Neuchâtel in Switzerland, is home to Fenin, and since 2012, the Larusée distillery. This Larusée Bleue absinthe is traditionally produced according to an old, time-honored recipe, with the various herbs carefully selected and gently processed by the master distiller using considerable expertise. The result is a clear absinthe with a slightly milky note and a fine texture – complex, seductive, and refreshing. On the nose, discreet aromas of anise develop, followed by spicy, floral chamomile notes that enhance the complexity. On the palate, light notes of anise, earth, chamomile, and mushroom create a fine, complex, and rounded mouthfeel, leading into a long, harmonious finish. Larusée Bleue absinthe most recent award, "Gold," was won at the Spirits Selection par le Concours Mondial de Bruxelles in 2020.
