The small village in Val-de-Ruz, less than 10 kilometers from the city of Neuchâtel in Switzerland, has been home to the Larusée distillery since 2012. Their absinthe, Larusée Bleue, is traditionally produced according to an old, time-honored recipe. The various herbs are carefully selected and gently processed by the master distiller with considerable expertise. The result is a clear absinthe with a slightly milky note and a fine texture – complex, seductive, and refreshing. On the nose, discreet aromas of anise develop, followed by spicy, floral chamomile notes that enhance the complexity. On the palate, light notes of anise, earth, chamomile, and mushroom create a fine, complex, and rounded mouthfeel, leading into a long, harmonious finish. Larusée Bleue absinthe most recent award, "Gold," was won at the Spirits Selection par le Concours Mondial de Bruxelles in 2020.
