Le Birlou is an exceptional liqueur from the Auvergne region, created by Henri Monier in the picturesque chestnut forests of the Cantal department. It combines the sweet taste of delicious apples with a slightly tart note and the smoothness of horse chestnuts. Aromas of vanilla and tarte Tatin round out its profile. This versatile liqueur is excellent as an aperitif and pairs perfectly with sweet desserts such as ice cream, tiramisu, or crème brûlée, especially when served well chilled. It is also surprisingly versatile as a mixer: it can be combined with white wine, champagne, or cider. A particular insider tip is to mix it with light beer.
