Manguin has captured the very essence of the olive, creating this authentic gin from three olive varieties grown in Haute-Provence, which have inextricably shaped Oli'Gin. This incredibly unique spirit, brimming with Provençal botanicals, herbs, and, most definitely, olives, was first macerated very slowly and gently, then distilled in a Charentais copper still before undergoing a maturation phase at contrasting temperatures. The nose offers fresh rosemary with dominant notes of juniper and olive, which give way to a hint of fruity sweetness, floral violet, and anise, accompanied by a light touch of sea salt. On the palate, it is light and complex with compelling notes of juniper and pineapple, supported by slightly salty, spicy olives, as well as hints of fennel and truffle. A wonderful aperitif, full of originality and freshness.
