Unlike Mayfair London Dry Gins, this Old Tom Gin is an Old Dutch-style spirit, less botanically driven and sweetened with sugar crystals. It evokes 18th-century London, when rogues scoffed at laws restricting alcohol sales and faceless vending machines made of wood and metal, resembling cat statues, were installed. The nose is surprisingly floral with subtle notes of juniper and orange peel, along with hints of iris and fennel, and a touch of sweet licorice.
