Pastis De L'Ile De Ré is the product of a collaboration between an award-winning sommelier and an organic herb producer, Didier Dorin. The herbs for this pastis come from a pristine, saline nature reserve near the Atlantic Ocean, the Ré-Land. The distinctive anise flavor is achieved through a multi-day maceration process, requiring great patience and precision. The fennel maceration is then enhanced with an infusion of herbs gathered on the island. The sommelier, recipient of the "Meilleur Ouvrier de France" award, is responsible for the blend of the pastis. The golden Pastis De L'Ile de Ré Millesime 2022, like all great vintages, evolves with each new harvest. Its bouquet is always dependent on nature, the soil, and the climatic conditions. The 2022 vintage offers the nose very vegetal, raw fennel notes, underscored by harmonious, subtle aromatics. The palate is greeted by fresh notes of anise, full of licorice and generous, volatile minerality. Pastis De L'Ile De Ré is the very first organic gourmet vintage pastis aperitif and has been certified under the Ecocert Organic Farming label.
