Sugarcane comes in a wide range of colors, each with its own unique aromas and flavor profiles, which are reflected in the resulting rums. Yellow sugarcane, due to its fibrous texture, is difficult to process and yields only a small amount of juice, which is why it has gradually fallen into obscurity. However, it is precisely this small quantity of juice, characterized by its high sugar content, that significantly influences the aromatic profile of the rum. This agricultural white rum made from yellow sugarcane surprises with an original combination of aromas.
