Oliver & Oliver, one of the world's largest rum producers, created the Summum brand in the Dominican Republic. The Summum 12YO Cognac Finish is the latest addition to the series. It is a blend of premium rums aged for at least 12 years in ex-bourbon barrels using the Solera system. Before bottling, the rum undergoes a special finishing process in French oak barrels that previously held cognac. On the nose, the Summum 12YO Cognac Finish displays intense, floral, and slightly sweet notes. On the palate, it is complex, subtly woody, and sweet with a fresh note, accompanied by aromas of vanilla, ripe fruit, and the distinct influence of the cognac barrel. The finish is long, well-structured, and warming.
