This Fino from Bodegas William & Humbert is made from carefully selected Palomino grapes from the Pago de Añina vineyard, harvested in 2015. The year boasted a balanced climate with approximately 600 liters of rainfall per square meter, providing ideal conditions for high-quality grapes. The first must was fermented under temperature control and, after filtering off the lees, prepared for biological aging. A protective layer of yeast naturally formed in old American oak barrels, beneath which this vintage sherry matured statically. It spent a total of seven years in 600-liter barrels before wine from all twelve barrels was selected for bottling in 2022. The limited edition comprises approximately 1,000 bottles. In the glass, the Williams Colección Añadas Fino En Rama 2015 displays a beautiful golden color with luminous reflections. On the nose and palate, it reveals great aromatic complexity with pronounced notes typical of biological maturation. The sherry is spicy, refined, and balanced, with noticeable body, an oily texture, and a very long, expressive finish of remarkable depth and elegance.
