The unique Pago Vintage project by Bodegas Williams & Humbert was launched in 2017 and is dedicated to the precise expression of individual vineyard sites. The first must for this Fino comes from carefully selected Palomino grapes from the Pago de Carrascal appellation and was fermented at controlled temperatures. After filtering off the lees, biological, static aging began, lasting six years in old 600-liter American oak casks. Subsequently, from a total of seventeen casks, a specific selection was made between casks number 14 and 17, chosen for their exceptional finesse, structure, volume, and pronounced minerality, which particularly clearly reflect the character of Pago de Carrascal. The result is an exceptionally fine and elegant sherry. Williams Colección Añadas Fino En Rama Carrascal 2017 displays a luminous golden color and reveals great aromatic complexity with pronounced notes of organic vinification. On the palate, nuances of milky almonds emerge, accompanied by a very dense, almost oily texture and considerable volume. Delicate, round, and silky in taste, this Fino is presented as a strictly limited bottling of only 500 bottles.
