English Harbour decided to experiment with aging molasses rum in uncharred barrels. After a gentle maturation period of eight years in Antigua's tropical climate, the result proved to be a jewel of purity. English Harbour was speechless at the spirit's aromas, integrity, and elegance, and decided to bottle the rum directly from the barrel, without blending, in a limited edition. On the nose, Coeur De Savalle reveals a bouquet of fruits and honey notes reminiscent of candied apples and lightly caramelized butter popcorn. These are followed by creamy notes of white chocolate, and then tropical fruits such as banana and pineapple. On the palate, it is surprisingly smooth, interesting, and very well-integrated, with similar notes to those on the nose. Caramelized corn notes emerge, slightly darker than on the nose, followed by an intense explosion of flavors, along with caramelized pineapple and banana notes. Its finish remains pleasantly warm, with the white chocolate notes from the nose returning, accompanied by a light touch of toasted coconut.
